Combine the following ingredients in a crock pot: 1 can diced tomatoes, 1 can diced tomatoes with garlic and basil, 1 small can corn, 3 cans beans (I used northern white, light red, and garbanzo beans), 1 can black bean soup, 1 can vegetarian baked beans, 1 large onion (diced), 10 sun-dried tomato slices, 1/2 cup diced bok choy (or celery), and sliced mushrooms.
