Once a year I like to make a decadent dessert in the spring. When I make it I tell myself I have 51 more weeks to work off those calories. I have had to skip it the last 3 years because I was traveling. I was really looking forward to it this year. But I couldn't find any rhubarb besides what was in various gardens around town. Today I visited the farmers market at Levee park and bought some rhubarb from an Amish farmer who lives in Wisconsin. Here is my recipe for Yorkshire rhubarb.
Ingredients: 1/4 C. butter, 2 eggs, 3/4 C. milk, 3/4 C. flour, 1/2 tsp. salt, 2 C. sliced rhubarb, 1/2 C. brown sugar
Method: heat butter in 1 quart baking dish in 425 degree oven till bubbling. Combine eggs, milk, flour, and salt in blender. Pour into hot butter. Pour rhubarb into center of batter and sprinkle with brown sugar. Bake at 425 degrees for 25 minutes or crust is brown. Serve warm with whipped or ice cream. 4-6 servings. 341 calories
